Butter Chicken


 Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup unsalted butter
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon tomato paste
  • 1 can (14.5 oz) crushed tomatoes
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)
  • Cooked rice or naan, for serving

Instructions:

  1. In a large bowl, combine the chicken, yogurt, lemon juice, cumin, paprika, salt, ginger, and cayenne pepper. Stir well to coat the chicken evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight.

  2. Melt the butter in a large skillet over medium heat. Add the onion and cook until soft and translucent, about 5 minutes. Add the garlic and fresh ginger and cook for an additional minute.

  3. Add the marinated chicken to the skillet and cook until browned on all sides, about 10 minutes.

  4. Add the tomato paste and crushed tomatoes to the skillet and stir well. Reduce the heat to low, cover the skillet, and let the mixture simmer for about 20 minutes, stirring occasionally.

  5. Add the heavy cream to the skillet and stir well. Continue to simmer the mixture for an additional 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.

  6. Season the butter chicken with salt and pepper to taste. Garnish with fresh cilantro, if desired. Serve hot with cooked rice or naan.
