Roasted Garlic Chicken
Ingredients:
- 4 bone-in, skin-on chicken breasts
- 1 whole garlic bulb
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 2 teaspoons dried thyme
- 2 tablespoons unsalted butter, melted
- 1 lemon, cut into wedges
- Fresh thyme sprigs, for garnish (optional)
Instructions:
Preheat the oven to 400°F (200°C).
Cut off the top of the garlic bulb to expose the cloves. Drizzle 1 tablespoon of olive oil over the garlic bulb and wrap it in aluminum foil. Roast in the oven for 30-40 minutes, or until the garlic cloves are tender and golden brown. Remove from the oven and let cool.
While the garlic is roasting, pat the chicken breasts dry with paper towels. Season with salt, black pepper, and dried thyme, rubbing the seasoning all over the chicken.
In a large oven-safe skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts, skin-side down, and cook for about 5 minutes, until golden brown. Flip the chicken and cook for an additional 3-4 minutes.
Squeeze the roasted garlic cloves out of the bulb and add them to the skillet with the chicken. Brush the melted butter over the chicken and garlic.
Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.
Serve the roasted garlic chicken hot, garnished with lemon wedges and fresh thyme sprigs, if desired.
