Bharwa Bhindi Recipe

Bharwa Bhindi 


Ingredients:

250 grams of fresh okra (bhindi)

2 medium-sized onions, finely chopped

2-3 green chillies, finely chopped

1/2 tsp cumin seeds (jeera)

1/2 tsp fennel seeds (saunf)

1/2 tsp turmeric powder (haldi)

1 tsp coriander powder (dhaniya)

1 tsp cumin powder (jeera powder)

1 tsp red chilli powder

1/2 tsp amchur powder (dry mango powder)

Salt to taste

2 tbsp oil

For the stuffing:


1/2 cup roasted besan (gram flour)

2 tbsp oil

1 tsp cumin seeds (jeera)

1/4 tsp asafoetida (hing)

1/2 tsp turmeric powder (haldi)

1 tsp coriander powder (dhaniya)

1 tsp cumin powder (jeera powder)

1/2 tsp amchur powder (dry mango powder)

Salt to taste

Instructions:


Wash the okra well and dry them using a cloth or kitchen towel. Cut off the head and tail of each okra and slit them from the middle lengthwise. Make sure not to cut them all the way through.

In a pan, heat 2 tbsp oil and add cumin seeds and fennel seeds. When they crackle, add finely chopped onions and green chillies. Sauté until the onions turn translucent.

Add turmeric powder, coriander powder, cumin powder, red chilli powder, amchur powder, and salt. Mix well and sauté for 2-3 minutes.

Let the mixture cool down and then stuff it inside the slit okra. Keep the remaining stuffing aside.

In a separate pan, heat 2 tbsp oil and add cumin seeds and asafoetida. When they crackle, add the remaining stuffing mixture and sauté for 2-3 minutes.

Now add the stuffed okra to the pan and mix well. Cover the pan and let it cook on medium-low flame for 15-20 minutes or until the okra is cooked properly. Keep stirring occasionally.

Bharwa Bhindi is ready to serve. Garnish with fresh coriander leaves and serve hot with roti or paratha.
