Fish curry Recipe
Ingredients:
500g fish (preferably pomfret or kingfish)
1 onion, chopped
2 cloves of garlic, minced
1 teaspoon of grated ginger
2 green chilies, chopped
1 teaspoon of cumin seeds
1 teaspoon of coriander seeds
1 teaspoon of turmeric powder
1 teaspoon of red chili powder
1 teaspoon of tamarind paste
1/2 cup of coconut milk
2 tablespoons of vegetable oil
Salt to taste
Water as needed
Fresh coriander, chopped (for garnish)
Instructions:
Clean and cut the fish into medium-sized pieces.
In a spice grinder or mortar and pestle, grind the cumin seeds and coriander seeds into a fine powder.
In a large pan or pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
Add the minced garlic, grated ginger, and chopped green chilies and cook for another minute, stirring occasionally.
Add the ground cumin and coriander powder, turmeric powder, and red chili powder and stir well.
Add a little water to the pan and let the mixture cook for 2-3 minutes.
Add the tamarind paste and stir again.
Add the fish pieces to the pan and gently mix them in with the spice mixture.
Pour in enough water to cover the fish and let it simmer for about 10-12 minutes.
Add the coconut milk to the pan and stir well.
Simmer for another 2-3 minutes and then turn off the heat.
Season with salt to taste.
Garnish with fresh coriander before serving.
