Methi Dal
Ingredients:
1 cup split yellow lentils (also known as toor dal)
2 cups water
1 cup chopped fresh fenugreek leaves (methi)
1 onion, finely chopped
2-3 garlic cloves, minced
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp turmeric powder
1 tsp red chili powder
Salt to taste
2 tbsp oil
1 tbsp chopped coriander leaves for garnishing
Instructions:
Rinse the split yellow lentils (toor dal) under running water until the water runs clear. Then, soak the lentils in water for 15-20 minutes.
Drain the water from the soaked lentils and transfer them to a pressure cooker or a pot. Add 2 cups of water and turmeric powder. Mix well and pressure cook for 4-5 whistles or until the lentils are soft and cooked.
Meanwhile, wash the fenugreek leaves (methi) and chop them finely. Set aside.
Heat 2 tbsp of oil in a pan. Add cumin seeds and mustard seeds. Let them crackle.
Add chopped onion and minced garlic. Saute until the onions turn translucent.
Add chopped fenugreek leaves (methi) and saute for a minute.
Add red chili powder and salt. Mix well.
Add the cooked lentils (dal) to the pan and mix well. If the dal is too thick, add some water to adjust the consistency.
Let the dal simmer for 5-7 minutes on low heat. Stir occasionally.
Turn off the heat and garnish with chopped coriander leaves.
Your delicious methi dal is ready to be served with hot steamed rice or roti. Enjoy!
