Moong dal Halwa
Ingredients:
1 cup moong dal (split green gram)
1 cup ghee
1 cup sugar
2 cups water
1/2 tsp cardamom powder
A pinch of saffron
Chopped nuts for garnish (optional)
Directions:
Rinse the moong dal under running water until the water runs clear. Soak the dal in water for 2-3 hours.
Drain the water from the dal and grind it into a coarse paste in a food processor.
Heat ghee in a heavy-bottomed pan on low heat. Add the ground moong dal and stir continuously for 15-20 minutes until it turns golden brown and gives off a nutty aroma.
In a separate pan, bring the water to a boil. Add the sugar, cardamom powder, and saffron. Stir until the sugar dissolves.
Add the sugar syrup to the pan with the cooked dal. Be careful as it may splatter.
Increase the heat to medium and keep stirring the mixture continuously to prevent lumps from forming. Cook for 15-20 minutes until the mixture thickens and starts to leave the sides of the pan.
Garnish with chopped nuts (optional) and serve hot or warm.
