Pani Puri Recipe
Ingredients:
1 cup Semolina (Suji)
1/4 cup All-purpose flour (Maida)
1/2 tsp Salt
Water (as required)
Oil (for deep-frying)
For the filling:
2 cups boiled and mashed potatoes
1/2 cup boiled chickpeas
1/4 cup chopped onion
1/4 cup chopped coriander leaves
1/4 tsp roasted cumin powder
1/2 tsp chaat masala
Salt (to taste)
For the Pani:
1 cup chopped mint leaves
1 cup chopped coriander leaves
2-3 green chillies
1 inch ginger
1 tbsp tamarind paste
1 tbsp lemon juice
1 tsp roasted cumin powder
1/2 tsp chaat masala
Salt (to taste)
3 cups water
Instructions:
In a bowl, mix semolina, all-purpose flour, and salt. Add water gradually and knead to form a stiff dough. Cover it and keep it aside for 30 minutes.
After 30 minutes, knead the dough again and roll it into a thin sheet. Cut small circles from the sheet using a cookie cutter or any small round-shaped object.
Heat oil in a deep frying pan over medium heat. Fry the puris in the hot oil until they turn golden brown and crispy. Drain the fried puris on a paper towel and set aside.
For the filling, mix together the mashed potatoes, boiled chickpeas, chopped onion, chopped coriander leaves, roasted cumin powder, chaat masala, and salt in a bowl. Keep aside.
For the pani, blend together the mint leaves, coriander leaves, green chillies, ginger, tamarind paste, lemon juice, roasted cumin powder, chaat masala, salt, and water in a blender until smooth.
To serve, take a puri, make a small hole on top using your thumb or a small spoon, and fill it with the potato and chickpea filling. Dip it in the pani and enjoy!
Note: You can adjust the spiciness and tanginess of the pani according to your taste by adding more or less green chillies, tamarind paste, and lemon juice.
