Puran Poli
Ingredients:
1 cup chana dal (split Bengal gram)
1 cup jaggery, grated or powdered
1 cup all-purpose flour (maida)
1/4 tsp turmeric powder
1/4 tsp cardamom powder
2-3 tbsp ghee (clarified butter)
Water, as required
Salt, a pinch
Directions:
Rinse chana dal in water and soak in enough water for 2-3 hours. Drain the water completely.
Add the dal to a pressure cooker with 2 cups of water and a pinch of salt. Pressure cook for 3-4 whistles or until the dal is soft and cooked through.
Open the pressure cooker and mash the dal well using a masher or the back of a spoon. There should be no lumps in the mashed dal.
Add grated jaggery to the mashed dal and mix well. Cook the mixture on low heat until the jaggery melts and combines well with the dal. Keep stirring continuously to avoid burning.
Add cardamom powder to the mixture and mix well. Turn off the heat and let the mixture cool down completely.
Meanwhile, prepare the dough by mixing all-purpose flour, turmeric powder, and a pinch of salt in a bowl. Add enough water to make a soft and pliable dough. Knead the dough well for 5-6 minutes until it is smooth.
Divide the dough into equal-sized balls and roll them into small circles. Place a small amount of the cooled dal-jaggery mixture in the center of each circle.
Bring the edges of the dough together and seal the filling completely. Dust the dough ball with flour and roll it out into a circle using a rolling pin.
Heat a tawa or griddle over medium heat. Place the rolled-out puran poli on the tawa and cook on both sides until brown spots appear on the surface.
Apply ghee on both sides and cook until the puran poli is crispy and golden brown.
Serve hot with ghee or milk.
