Veg Manchurian Recipe 

Ingredients:
For the vegetable balls:
1 cup finely chopped cabbage
1/2 cup grated carrot
1/4 cup finely chopped capsicum
1/4 cup finely chopped onion
1/4 cup all-purpose flour
1/4 cup corn flour
1 tsp ginger-garlic paste
1 tsp soy sauce
Salt to taste
Oil for deep frying
For the sauce:

2 tbsp oil
1 tbsp finely chopped garlic
1 tbsp finely chopped ginger
1/4 cup finely chopped onion
1/4 cup finely chopped capsicum
1/4 cup finely chopped spring onion
2 tbsp soy sauce
2 tbsp tomato ketchup
1 tsp vinegar
1 tsp red chili sauce
1 tsp corn flour
Salt and black pepper to taste
1 1/2 cups water
Instructions:

In a mixing bowl, combine all the ingredients for the vegetable balls except for the oil. Mix well and form into small balls.

Heat oil in a deep frying pan over medium-high heat. Once hot, add the vegetable balls in batches and fry until they turn golden brown. Remove with a slotted spoon and set aside.

To make the sauce, heat 2 tbsp oil in a wok or frying pan over medium-high heat. Add chopped garlic and ginger and sauté for a few seconds.

Add chopped onions, capsicum and spring onions and sauté for a minute or two until they are slightly softened.

Add soy sauce, tomato ketchup, vinegar, red chili sauce, salt and black pepper. Mix well and cook for a minute.

Mix corn flour in 1/2 cup of water until well combined. Add this mixture to the pan and mix well.

Add 1 cup of water to the pan and bring the mixture to a boil. Reduce heat to low and let it simmer for a few minutes until the sauce thickens.

Add the vegetable balls to the sauce and mix gently to coat them with the sauce. Cook for a minute or two until the balls are heated through.

Garnish with chopped spring onions and serve hot with steamed rice or noodles.
