Gobi Paratha Recipe:
Ingredients:
For the dough:
2 cups whole wheat flour
1 tsp salt
1 tbsp oil
1 cup water
For the filling:
2 cups grated cauliflower (gobi)
1 tsp grated ginger
1 green chili, finely chopped
1/4 tsp cumin powder
1/4 tsp coriander powder
1/4 tsp garam masala powder
Salt to taste
1 tbsp oil
Instructions:
In a mixing bowl, combine whole wheat flour, salt, and oil. Add water slowly and knead the dough until smooth. Cover the dough and let it rest for 10-15 minutes.
In a pan, heat oil over medium heat. Add grated cauliflower, ginger, green chili, cumin powder, coriander powder, garam masala powder, and salt. Mix well and sauté for 4-5 minutes until the cauliflower is cooked through. Let it cool.
Divide the dough into equal-sized balls. Take one ball and roll it out into a small disc. Place a tablespoon of the cauliflower mixture in the center and bring the edges of the dough together to enclose the filling.
Flatten the ball slightly and dust it with flour. Roll it out into a round disc, making sure that the filling doesn't come out.
Heat a griddle or non-stick pan over medium heat. Place the paratha on the pan and cook for a minute or two. Drizzle oil or ghee on the paratha and flip it over. Cook for another minute or two, until both sides are golden brown.
Repeat the process with the remaining dough and cauliflower mixture. Serve hot with yogurt, pickle, or any chutney of your choice.
