Paneer Briyani
Ingredients:
1 cup of Basmati Rice
1 cup of Paneer, cut into small cubes
2 tbsp of Oil or Ghee
1 Bay Leaf
1 Cinnamon Stick
4 Cloves
4 Cardamom Pods
1 tsp Cumin Seeds
1 large Onion, finely chopped
1 tbsp Ginger Garlic paste
1 Green Chilli, finely chopped
1/2 cup Yogurt
1/2 tsp Turmeric Powder
1/2 tsp Red Chilli Powder
1 tsp Coriander Powder
Salt to taste
1/4 cup of Chopped Coriander leaves
1/4 cup of Mint leaves, chopped
Directions:
Rinse the rice in water a few times until the water runs clear. Soak the rice in water for at least 30 minutes.
Heat the oil in a pan, add the whole spices (bay leaf, cinnamon, cloves, cardamom, and cumin seeds) and fry for a minute.
Add the chopped onions and green chillies, and fry until the onions turn golden brown.
Add the ginger garlic paste and fry for a minute until the raw smell disappears.
Add the paneer cubes, turmeric powder, red chilli powder, coriander powder, and salt. Fry the paneer cubes for a minute until they turn slightly golden.
Add the yogurt and mix everything well. Cook for a couple of minutes until the yogurt is well blended with the paneer.
Drain the water from the soaked rice and add the rice to the pan. Fry the rice with the paneer mixture for a couple of minutes.
Add 2 cups of water to the pan and bring it to a boil. Cover the pan with a tight-fitting lid and simmer on low heat for 15-20 minutes or until the rice is fully cooked.
Once the rice is cooked, turn off the heat and let it rest for 10 minutes. Fluff the rice gently with a fork.
Garnish with chopped coriander and mint leaves before serving.
