Ingredients:

1 cup Daliya (broken wheat or cracked wheat)

2 tbsp ghee (clarified butter) or oil

1/2 tsp cumin seeds

1/2 inch cinnamon stick

2-3 green cardamom pods

2-3 cloves

1 small onion, finely chopped

1 small tomato, finely chopped

1 small carrot, finely chopped

1 small capsicum, finely chopped

1/4 cup green peas (fresh or frozen)

1/4 tsp turmeric powder

1/2 tsp red chili powder (optional)

1/2 tsp garam masala (optional)

Salt to taste

2 cups water

Fresh coriander leaves for garnish

Instructions:


Heat ghee or oil in a pan or pressure cooker on medium heat.

Add cumin seeds, cinnamon stick, cardamom pods, and cloves. Sauté for a minute until fragrant.

Add chopped onions and sauté until they turn golden brown.

Add chopped tomatoes and cook until they turn soft and mushy.

Add chopped carrots, capsicum, and green peas. Sauté for a couple of minutes.

Add turmeric powder, red chili powder (if using), garam masala (if using), and salt to taste. Mix well.

Add Daliya (broken wheat) and sauté for 2-3 minutes until it is lightly roasted.

Add water and give it a stir.

If using a pressure cooker, close the lid and pressure cook for 2 whistles on medium heat. If using a pan, cover with a lid and cook on low heat for about 15-20 minutes until the Daliya is cooked and the water is absorbed.

Once the Daliya is cooked, garnish with fresh coriander leaves and serve hot.

You can enjoy Daliya as a standalone dish or serve it with yogurt, pickle, or raita for a complete meal. It's a wholesome and nutritious dish that is easy to make and perfect for a healthy breakfast or a light meal. Enjoy!

1/4 tsp cardamom powder

A pinch of saffron strands (optional)

1/4 cup milk (optional)

Instructions:


Rinse the Daliya in water and drain. Set it aside.

In a saucepan, add water and bring it to a boil.

Add the rinsed Daliya to the boiling water and cook on medium heat until it is soft and cooked through, about 10-15 minutes. Drain any excess water.

In a separate pan, heat ghee on medium heat.

Add the chopped mixed nuts and sauté for a few minutes until they are lightly golden brown.

Add the cooked Daliya to the pan with the sautéed nuts and mix well.

Add jaggery or brown sugar to the pan and cook on low heat, stirring continuously until the jaggery or sugar is melted and well combined with the Daliya.

Add cardamom powder and saffron strands (if using) and mix well.

If desired, you can also add milk at this stage to make it creamier. Stir and cook for another minute.

Remove from heat and serve hot, garnished with some extra chopped nuts on top, if desired.
