Upma Recipe
Ingredients:
1 cup semolina (rava or sooji)
2 tablespoons oil or ghee
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1/2 teaspoon urad dal (split black gram)
1/2 teaspoon chana dal (split bengal gram)
1/2 teaspoon grated ginger
2 green chilies, finely chopped
1 onion, finely chopped
1/2 cup chopped vegetables (carrots, green peas, beans, etc.)
2 cups water
Salt to taste
Chopped coriander leaves for garnish
Instructions:
Heat oil or ghee in a pan and add mustard seeds. Let them splutter.
Add cumin seeds, urad dal, and chana dal. Fry till the dals turn golden brown.
Add grated ginger and chopped green chilies. Fry for a few seconds.
Add chopped onions and fry till they turn translucent.
Add chopped vegetables and fry for 2-3 minutes.
Add water and salt to the pan. Bring the water to a boil.
Lower the heat and gradually add the semolina, stirring continuously to avoid lumps.
Cover the pan and let it cook on low heat for 5-7 minutes or until the upma is cooked and has absorbed all the water.
Garnish with chopped coriander leaves and serve hot with chutney, pickle, or yogurt.
