Veg Thali 


 Ingredients:

Rice

Dal (Lentils)

Aloo Gobi (Potatoes and Cauliflower)

Palak Paneer (Spinach and Cottage Cheese)

Raita (Yogurt side dish)

Salad (Cucumber, Tomato, and Onion)

Papadum

Chapati (Indian Flatbread)

Ghee or Butter

Directions:


Rice: Wash 1 cup of rice and soak in water for 30 minutes. Boil 2 cups of water in a pot and add the rice. Cover and simmer for 18-20 minutes, or until the rice is cooked. Fluff with a fork and keep aside.

Dal: Wash and soak 1 cup of lentils for 30 minutes. In a pressure cooker, add the soaked lentils, 3 cups of water, 1 chopped onion, 1 chopped tomato, 1 tsp turmeric powder, 1 tsp cumin seeds, 1 tsp coriander powder, salt, and red chilli powder. Pressure cook for 3-4 whistles. Once the pressure releases, open the lid and add 1 tbsp ghee or butter. Mix well and keep aside.


Aloo Gobi: Heat 2 tbsp of oil in a pan, add 1 tsp cumin seeds, 1 chopped onion, 1 chopped tomato, 1 tsp turmeric powder, 1 tsp coriander powder, salt, and red chilli powder. Mix well and cook for 2-3 minutes. Add 1 cup of chopped cauliflower and 1 cup of chopped potatoes. Mix well and cover the pan. Cook for 10-12 minutes or until the vegetables are cooked. Garnish with chopped coriander leaves.


Palak Paneer: Heat 2 tbsp of oil in a pan, add 1 tsp cumin seeds, 1 chopped onion, and 1 chopped tomato. Mix well and cook for 2-3 minutes. Add 2 cups of chopped spinach and cook for 5 minutes. Let it cool down and blend it in a mixer. Add the blended mixture back to the pan, add 1 cup of paneer cubes, 1 tsp garam masala powder, 1 tsp salt, and 1/2 cup of water. Mix well and cook for 5-7 minutes.


Raita: Beat 1 cup of yogurt in a bowl. Add 1 chopped onion, 1 chopped tomato, 1 chopped cucumber, 1/2 tsp roasted cumin powder, 1/2 tsp black salt, and chopped coriander leaves. Mix well and keep aside.


Salad: Wash and chop 1 cucumber, 1 tomato, and 1 onion. Mix well and keep aside.


Papadum: Roast papadum over an open flame until it is crispy.


Chapati: Heat a tawa or flat pan, and cook chapatis on both sides until it is cooked.


Assemble: Place the rice, dal, aloo gobi, palak paneer, raita, salad, papadum, and chapati in separate bowls. Serve hot with a dollop of ghee or butter.
