Boiled Sprouts Salad
Ingredients:
1 cup mixed sprouts (such as mung bean sprouts, chickpea sprouts, or any other sprouts of your choice)
1 small cucumber, diced
1 small carrot, grated
1 small bell pepper (any color), diced
1 small apple, diced
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon honey or maple syrup (optional, for a touch of sweetness)
Salt to taste
Black pepper powder to taste
Instructions:
Take the mixed sprouts in a saucepan and add enough water to cover them. Add a pinch of salt and bring the water to a boil. Reduce the heat and simmer for about 5 minutes until the sprouts are tender but still have a slight crunch. Drain the sprouts and let them cool.
In a large mixing bowl, combine the boiled sprouts, diced cucumber, grated carrot, diced bell pepper, and diced apple. Mix well.
In a small bowl, whisk together lemon juice, olive oil, honey or maple syrup (if using), salt, and black pepper powder to make the dressing.
Pour the dressing over the sprout and vegetable mixture. Gently toss the salad to coat all the ingredients with the dressing.
Taste the salad and adjust the seasoning if needed.
Serve the boiled sprouts salad in small bowls or plates. You can also garnish it with some chopped fresh herbs if your child enjoys them.
