Healthy Ragi Idli Recipe
Ragi Idli
Ingredients:
1 cup ragi flour (finger millet flour)
1 cup idli rice (parboiled rice)
1/4 cup urad dal (skinned black lentils)
1/4 teaspoon fenugreek seeds (methi seeds)
Salt to taste
Water, as needed
Optional Ingredients:
Grated carrots, finely chopped spinach, or other vegetables of your choice
Chopped coriander leaves (for garnish)
Grated coconut (for flavor)
Instructions:
Wash the idli rice and urad dal separately and soak them in water along with fenugreek seeds for about 4-5 hours.
Drain the water from the soaked rice and dal. Grind them separately in a blender or wet grinder to a smooth batter. You can add a little water while grinding, if needed.
In a mixing bowl, combine the rice batter, urad dal batter, and ragi flour. Mix well to combine.
Add salt to taste and mix the batter thoroughly. The consistency of the batter should be slightly thick, similar to regular idli batter. If the batter is too thick, you can add a little water to adjust the consistency.
Cover the batter and let it ferment for 6-8 hours or overnight. Fermentation helps in making the idlis soft and fluffy.
After fermentation, give the batter a gentle stir. If it is too thick, you can add a little water to adjust the consistency.
Grease the idli plates or molds with oil. Pour the batter into each mold, filling them about three-fourths full. You can also add grated carrots, finely chopped spinach, or any other vegetables of your choice to the batter at this stage.
Steam the idlis in a steamer or pressure cooker without the whistle for about 10-12 minutes, or until a toothpick inserted into the center of an idli comes out clean.
Once the idlis are cooked, remove them from the steamer and let them cool for a minute or two. Then, gently remove the idlis from the molds using a spoon or a knife.
Serve the ragi idlis hot with sambar, coconut chutney, or any chutney of your choice. You can garnish them with chopped coriander leaves and serve them with a side of grated coconut for added flavor.

Note: Ragi idlis are naturally gluten-free and can be enjoyed by people with gluten intolerance. You can adjust the proportion of ragi flour to idli rice according to your preference. Adding vegetables to the batter enhances the taste and nutritional value of the idlis.
