 Kadhai paneer with laccha Paratha 


Ingredients for Kadhai Paneer:


250 grams paneer, cut into cubes

2 medium-sized onions, finely chopped

2-3 green chillies, chopped

1 capsicum, cut into small cubes

2 tomatoes, finely chopped

1 tablespoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon coriander seeds

1 teaspoon fennel seeds

1 teaspoon garam masala

1 teaspoon turmeric powder

1 teaspoon red chilli powder

1 tablespoon kasuri methi (dried fenugreek leaves)

Salt to taste

Oil for cooking

Ingredients for Laccha Paratha:


2 cups whole wheat flour

Salt to taste

Water as required

2 tablespoons ghee (clarified butter)

Directions:


For Kadhai Paneer, heat 2 tablespoons oil in a kadhai or a wok. Add cumin seeds, coriander seeds, and fennel seeds. Fry until they turn fragrant and lightly roasted.


Add finely chopped onions and green chillies. Fry until the onions turn translucent.


Add ginger-garlic paste and fry for a minute until the raw smell goes away.


Add chopped tomatoes and cook until they turn mushy and oil separates from the mixture.


Add turmeric powder, red chilli powder, and salt. Mix well.


Add cubed capsicum and fry for a minute or two.


Add paneer cubes and mix gently. Cook for 5-7 minutes on medium heat.


Crush dried fenugreek leaves (kasuri methi) between your palms and add them to the kadhai. Mix well.


Sprinkle garam masala and mix. Turn off the heat.


For Laccha Paratha, in a mixing bowl, add whole wheat flour, salt, and water as required. Knead into a soft and smooth dough. Cover it with a damp cloth and let it rest for 20-30 minutes.


After 30 minutes, divide the dough into equal-sized balls.


Take one dough ball and roll it into a circle. Apply ghee on top.


Sprinkle some dry flour on top. Fold it from the center to form pleats.


Roll it into a spiral shape and press it down.


Roll it again into a circle shape.


Heat a tawa or a flat pan on medium heat. Place the rolled paratha on the tawa.


Cook it until you see small bubbles on the surface. Flip it and apply ghee on top.


Cook until the paratha is golden brown and crispy on both sides.


Repeat the process with the remaining dough balls.


Serve hot with Kadhai Paneer.
