 Quick Rava Idli Recipe


Ingredients:

1 cup fine semolina (rava or sooji)

1 cup plain yogurt (curd)

1/4 cup water (adjust as needed)

1/2 teaspoon mustard seeds

1/2 teaspoon cumin seeds

1/2 teaspoon baking soda

1 tablespoon oil

1 tablespoon ghee (clarified butter)

1 tablespoon chopped cashews

1 tablespoon chopped coriander leaves

1 green chili, finely chopped (optional)

A pinch of asafoetida (hing)

Salt to taste

For Tempering (Tadka):


1 tablespoon oil

1/2 teaspoon mustard seeds

1/2 teaspoon urad dal (split black lentils)

1/2 teaspoon chana dal (split Bengal gram)

1 teaspoon finely chopped ginger

Few curry leaves

Instructions:


Heat oil in a pan and add mustard seeds. Let them splutter.

Add cumin seeds, chopped cashews, and asafoetida (hing). Sauté for a minute.

Add the semolina (rava) to the pan and roast it on medium-low heat until it turns light golden brown and gives a nice aroma. Stir continuously to avoid burning. Remove from heat and let it cool.

In a mixing bowl, whisk the plain yogurt (curd) until smooth. Add the roasted semolina (rava) and mix well.

Add water gradually while stirring, until you get a thick but pourable batter. Let the batter rest for 10-15 minutes.

In the meantime, prepare the tempering (tadka). Heat oil in a small pan and add mustard seeds. Let them splutter.

Add urad dal, chana dal, chopped ginger, and curry leaves. Sauté until the dals turn golden brown.

Add the tempering (tadka) to the rava-idli batter and mix well. Add salt to taste and adjust the consistency with a little water if needed.

Grease the idli plates with ghee or oil. Fill each mold with the prepared batter, leaving a little space for the idlis to expand.

Steam the idlis in a steamer for about 10-12 minutes or until a toothpick inserted into the idlis comes out clean.

Once done, remove the idli plates from the steamer and let them cool for a few minutes.

Carefully remove the idlis from the molds using a spoon or a knife.

Garnish with chopped coriander leaves and serve the Rava Idlis hot with coconut chutney or sambar.
