Lemon Rice Recipe

 Lemon Rice 


Ingredients:

1 cup basmati rice

2 tablespoons vegetable oil

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1/4 cup raw peanuts

1/4 cup split Bengal gram (chana dal)

1/4 cup cashews (optional)

1 tablespoon grated ginger

2 green chilies, slit lengthwise

10-12 curry leaves

1/2 teaspoon turmeric powder

Juice of 1 lemon

Salt to taste

Fresh cilantro leaves, for garnish


Instructions:

Cook the basmati rice according to the package instructions and let it cool. Fluff the cooked rice with a fork to separate the grains.

Heat the vegetable oil in a large pan or skillet over medium heat. Add the mustard seeds and cumin seeds and let them splutter.

Add the peanuts, split Bengal gram, and cashews (if using) to the pan. Stir fry for a few minutes until they turn golden brown.

Add the grated ginger, green chilies, and curry leaves to the pan. Sauté for a minute until the flavors release.

Sprinkle turmeric powder over the mixture and stir well to combine.

Add the cooked rice to the pan and gently mix it with the spices and nuts. Make sure the rice is evenly coated with the turmeric mixture.

Squeeze the juice of one lemon over the rice and season with salt to taste. Stir well to distribute the lemon juice and seasoning throughout the rice.

Cook the lemon rice for another 2-3 minutes, stirring occasionally, to allow the flavors to meld together.

Remove the pan from heat and garnish with fresh cilantro leaves.

Your lemon rice is now ready to serve! It can be enjoyed as a main course or as a side dish with yogurt or a pickle of your choice.
