Masala Puri
Ingredients:
For the puris:
1 cup whole wheat flour
1/4 teaspoon salt
Water for kneading
Oil for deep frying
For the masala mixture:
1 cup boiled and mashed potatoes
1/4 cup chopped onions
1/4 cup chopped tomatoes
1/4 cup boiled and mashed green peas
1 green chili, finely chopped (adjust to taste)
1/2 teaspoon ginger-garlic paste
1/2 teaspoon red chili powder
1/2 teaspoon roasted cumin powder
1/2 teaspoon chaat masala
Salt to taste
2 tablespoons chopped coriander leaves
Sev (crispy chickpea flour noodles), for garnish
Tamarind chutney and green chutney, for serving
Instructions:
In a mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a firm dough. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
Meanwhile, prepare the masala mixture. In a separate bowl, mix together boiled and mashed potatoes, chopped onions, chopped tomatoes, mashed green peas, green chili, ginger-garlic paste, red chili powder, roasted cumin powder, chaat masala, salt, and chopped coriander leaves. Mix well to combine all the ingredients.
Divide the dough into small lemon-sized balls. Roll each ball into a small circle, about 2-3 inches in diameter.
Heat oil in a deep frying pan or kadhai over medium heat. Once the oil is hot, carefully slide the rolled puris into the hot oil and fry until they turn golden brown and crispy. Remove the puris from the oil using a slotted spoon and drain excess oil on a paper towel.
To serve, place a few puris on a serving plate. Top each puri with a spoonful of the masala mixture.
Drizzle tamarind chutney and green chutney over the masala mixture according to your taste.
Garnish with a generous amount of sev.
Repeat the process for the remaining puris and serve the Masala Puris immediately.
Masala Puri is best enjoyed as a street food snack or as a party appetizer. The combination of crispy puris, spicy masala mixture, and tangy chutneys creates a burst of flavors. Adjust the spices and chutneys according to your preference. Enjoy!
