Mushroom Chilli Recipe

 Mushroom Chilli 


Ingredients:

1 tbsp olive oil

1 onion, chopped

3 cloves garlic, minced

1 green bell pepper, chopped

2 cups chopped mushrooms

2 cans (14.5 oz each) diced tomatoes

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 tbsp chili powder

1 tsp ground cumin

1/2 tsp paprika

Salt and pepper, to taste

Optional toppings: shredded cheddar cheese, sliced jalapenos, chopped cilantro

Instructions:


Heat olive oil in a large pot over medium heat. Add onion and garlic and cook for 2-3 minutes, until onion is translucent.




Add green bell pepper and mushrooms, and cook for another 3-4 minutes, until vegetables are tender.


Add diced tomatoes (with their juices), kidney beans, black beans, chili powder, cumin, paprika, salt, and pepper. Stir well to combine.


Bring the mixture to a simmer and let it cook for 15-20 minutes, stirring occasionally.


Serve hot with your choice of toppings, such as shredded cheddar cheese, sliced jalapenos, and chopped cilantro. Enjoy!
