 Rajgira ladoo


Ingredients:

1 cup rajgira (amaranth) flour

1/2 cup grated jaggery or powdered sugar

1/4 cup ghee or clarified butter

1/4 cup roasted nuts (cashews, almonds, pistachios), chopped

1/4 tsp cardamom powder

Instructions:


Heat a heavy-bottomed pan on medium heat and dry roast the rajgira flour for 4-5 minutes or until it turns light brown in color. Stir continuously to avoid burning.

Transfer the roasted flour to a plate and let it cool down to room temperature.

In the same pan, heat the ghee on low heat until it melts completely.

Add the grated jaggery or powdered sugar to the pan and mix well until the jaggery/sugar melts and combines with the ghee.

Add the roasted rajgira flour, chopped nuts, and cardamom powder to the pan and mix well until everything is combined.

Turn off the heat and let the mixture cool down for a few minutes.

Grease your palms with some ghee and shape the mixture into small round balls or ladoos.

Repeat the process until all the mixture is used up.

Let the ladoos cool down completely and store them in an airtight container.

Your delicious and nutritious Rajgira ladoos are ready to be enjoyed!
