Tomato Pasta
Ingredients:
200 grams pasta (any variety)
2 tablespoons olive oil
3 cloves garlic, minced
1 small onion, finely chopped
2 cups tomato puree
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional, for heat)
Salt and pepper to taste
Grated Parmesan cheese (for garnish)
Fresh basil leaves (for garnish)
Instructions:
Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
Prepare the sauce: In a large skillet or saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.
Add the tomato puree: Pour the tomato puree into the skillet and stir well. Bring the sauce to a simmer and let it cook for about 10 minutes, allowing the flavors to meld together.
Season the sauce: Add the dried basil, dried oregano, red pepper flakes (if using), salt, and pepper to the sauce. Adjust the seasonings to your taste preferences.
Combine the pasta and sauce: Add the cooked pasta to the skillet with the tomato sauce. Toss well to ensure that the pasta is evenly coated with the sauce. Cook for an additional 2-3 minutes to heat the pasta through.
Serve: Transfer the tomato pasta to a tiffin container or lunchbox. Garnish with grated Parmesan cheese and fresh basil leaves. You can also pack some extra Parmesan cheese on the side if desired.
Note: If you prefer a creamier sauce, you can add a splash of heavy cream or a dollop of cream cheese to the tomato sauce while it simmers.
