Veg French Toast
Ingredients:
4 slices of bread (preferably slightly stale)
1 cup unsweetened plant-based milk (such as almond, soy, or oat milk)
2 tablespoons chickpea flour (also known as besan)
1 tablespoon nutritional yeast (optional, for a cheesy flavor)
1 tablespoon maple syrup or any other liquid sweetener
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Pinch of salt
Coconut oil or cooking spray for greasing the pan
Maple syrup, fresh fruits, or powdered sugar for serving (optional)
Instructions:
In a shallow bowl, whisk together the plant-based milk, chickpea flour, nutritional yeast (if using), maple syrup, vanilla extract, ground cinnamon, and salt until well combined.
Place a non-stick skillet or griddle pan over medium heat and add a small amount of coconut oil or coat it with cooking spray.
Dip a slice of bread into the batter, making sure to coat both sides evenly. Allow any excess batter to drip off.
Place the coated bread onto the preheated skillet or griddle pan. Repeat the process with the remaining slices of bread.
Cook the French toast for about 2-3 minutes on each side or until golden brown and crispy.
Once cooked, transfer the French toast to a serving plate. You can keep them warm in a preheated oven at a low temperature while you cook the rest.
Repeat the dipping and cooking process with the remaining slices of bread until all the batter is used.
Serve the French toast warm with maple syrup, fresh fruits, or a dusting of powdered sugar, according to your preference.
