 Veg Mix Paratha 


Ingredients:

2 cups whole wheat flour

1 cup mixed vegetables (carrots, peas, beans, corn, etc.), finely chopped

1 small onion, finely chopped

1 green chili, finely chopped (optional)

1/2 teaspoon ginger-garlic paste

1/2 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder

1/2 teaspoon garam masala

Salt to taste

2 tablespoons oil

Water for kneading

Ghee or oil for cooking


Instructions:

In a mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water and knead to form a smooth dough. Cover the dough and let it rest for 15-20 minutes.

Meanwhile, heat 1 tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.

Add the chopped onions and green chili (if using) to the pan and sauté until the onions turn translucent.

Add the ginger-garlic paste and sauté for another minute.

Now, add the mixed vegetables, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 4-5 minutes until the vegetables are tender. Remove from heat and let the mixture cool down.

Divide the dough into small lemon-sized balls. Take one dough ball and roll it into a small disc of about 4-5 inches in diameter.

Place a spoonful of the vegetable mixture in the center of the disc. Bring the edges together and seal the filling inside by pressing gently.

Dust the stuffed ball with flour and roll it out gently into a paratha of desired thickness.

Heat a tawa or a flat pan over medium heat. Place the rolled paratha on the pan and cook for a minute or until small bubbles appear on the surface.

Flip the paratha and spread some ghee or oil on the cooked side. Cook for another minute or until both sides are golden brown and crispy.

Repeat the process with the remaining dough balls and vegetable mixture to make more parathas.

Serve the veg mix parathas hot with yogurt, pickle, or any chutney of your choice.
