 Suji Barfi (Rava)


Ingredients:

1 cup semolina (suji or rava)

1 cup sugar

1/2 cup ghee (clarified butter)

1/2 cup milk

1/2 teaspoon cardamom powder

A handful of chopped nuts (almonds, cashews, pistachios) for garnish

Instructions:

Heat ghee in a heavy-bottomed pan or kadai on medium heat.

Add semolina (suji) to the pan and roast it until it turns golden brown and releases a fragrant aroma. Stir continuously to prevent burning.

In another saucepan, heat milk until warm.

Gradually add the warm milk to the roasted semolina and stir well to combine. Be careful as it may splutter.

Cook the mixture on low heat for about 4-5 minutes, stirring constantly to avoid lumps.

Add sugar to the mixture and continue stirring until the sugar dissolves completely.

Add cardamom powder and mix well.

Continue cooking the mixture on low heat, stirring continuously until it thickens and starts to leave the sides of the pan. This will take about 8-10 minutes.

Grease a plate or a shallow tray with ghee.

Transfer the thickened mixture onto the greased plate and spread it evenly, using a spatula.

Garnish the top with chopped nuts, pressing them gently into the mixture.

Allow it to cool completely and then cut into desired shapes, such as squares or diamonds.

Once completely cooled, store suji barfi in an airtight container.
